‘Huelva’ strawberries with vinegar slush and cream of cumin and cinnamon

Ingredientes:

• 150 ml PDO Vinegar ‘Montilla Moriles’
• 100 ml water
• 175 g sugar
• 2 gelatin sheets
• 500 ml milch
• 3 egg yolks
• 1 teaspoon of cinnamon
• 1 teaspoon of cumin
• 350 g ‘Huelva’ strawberries
• Dill

Method:

1. Hydrate 2 sheets of gelatine in cold water
2. Pour the water
3. Add the sugar
4. Bring to a boil
5. Add Vinegar PDO ‘Montilla Moriles’
6. Add Sheet of gelatine drained
7. Keep in the fridge during 12 hours
8. Add milk
9. And 3 egg yolks
10. Add the sugar
11. Stir until the cream thickens
12. Add 1 teaspoon of cinnamon
13. 1 teaspoon of cumin too
14. Reserve in the fridge
15. Add ‘Huelva’ strawberries
17. Let it macerate for 15 minutes
18. Add cream
19. And the macerated ‘Huelva’ strawberries
20. Add PDO ‘Montilla Morile’s vinegar slush too
21. Toss in the dill
22. Pairing with PDO orange wine ‘Condado de Huelva’ and sweet wine Pedro Ximenez PDO ‘Montilla Moriles’.
