Olive Oil Torta with mackerel, goat cheese crean, dark grape and mint

Ingredients:

• 250 g goat cheese from ‘Ronda’
• 250 g cream
• Orange Olive Oil torta
• 1 can of mackerel with the PGI ‘Melva y caballa de Andalucía’
• 8 dark grapes
• Salt and pepper
• Mint
• PDO Extra Virgin Olive Oil ‘Sierra Mágina’

Method:

1. 250 g cream
2. 250 g goat cheese from ‘Ronda’
3. Mix all until obtain a creamy mixture
4. Add salt and pepper to taste
5. Reserve and leave temper
6. Orange Olive Oil torta
7. Cream of cheese
8. Can of mackerel with the PGI ‘Melva y caballa de Andalucía’
9. Dark grape cut into quartes without pips
10. Mint
11. PDO Extra Virgin Olive Oil ‘Sierra Mágina’
12. Pairing with PDO ‘ Manzanilla de Sanlúcar de Barradema’
