‘Retinto’ Burger with Andalusian Tomato Sauce

Ingredients:

• 1 Kg tomatoes in branch of ‘La Cañada’
• 1 onion
• 1 green pepper
• 2 cloves of garlic
• 50 g brown sugar
• 2 tablespoons Perrins sauce
• 75 ml Vinegar PDO ‘Montilla Moriles’
• 2 tablespoons of ras the hanout
• PDO EVOO ‘Baena’
• Salt and pepper
• 4 ‘Retinto’ burgers
• Cilantro sprouts
•1 spoonful of paprika

Method:

1. 50 g, pour the PDO EVOO ‘Baena’
2. Add onion
3. And garlic
4. Fry the garlics
5. Add green pepper
6. And tomatoes in branch of ‘La Cañada’
7. Mix in the brown sugar
8. Pour the Perrins sauce
9. Cook it during 30 minutes
10. Mash the sauce
11. Pour the Vinegar PDO ‘Montilla Moriles’
12. Also add ras the hanout
13. Cook until the sauce thickens
14. Season with salt and pepper
15. Cook the Retinto burger
16. Put the burger on the bread
17. Topped with rocket

19. Cilantro sprouts
20. Parining with red wine PDO ‘Málaga’
